Chicken Liver Curry Ingredients 500 g Chicken livers 2 tablespoons Ghee or oil 1 Large onion, finely chopped 2 cloves Garlic, finely chopped 2 tablespoons Finely grated fresh ginger 1/2 teaspoon Ground turmeric 1 teaspoon Chili powder 3 teaspoons Ground coriander 2 teaspoons Ground cumin 1 teaspoon Garam masala 1 Ripe tomato, chopped 1 teaspoon Salt 1/2 teaspoon Ground black pepper

1. Wash and drain the chicken livers.

2. Cut each one in half and discard any yellow spots.

3. Heat the ghee or oil and fry the onion, garlic and ginger until onion is soft and golden brown.

4. Add turmeric, chili powder, coriander and cumin.

5. Fry, stirring for about 2 minutes, then add the garam masala, tomato and salt and cook. covered, until tomato is pulpy.

6. Stir and mash tomato with wooden spoon to speed the process.

7. Add chicken livers, stir well.

8. Sprinkle pepper over and cook, covered for 15 to 20 minutes.

9. Serve hot with rice and other accompaniments.
